Fried Tofu with Fresh Salad and Pad Thai Dressing

INGREDIENTS 

  • 14 oz. of premium soft tofu
  • 6 oz. of Thai 3 wheels pad Thai sauce
  • 10 oz. of daikon (peeled and shredded)
  • 8 oz. of carrot (peeled and shredded) 
  • ½ red bell pepper (cut into thin strips)
  • ½ green bell pepper (cut into thin strips)
  • ½ cup of tempura flour
  • 1 cup of bread crumbs (Panko)
  • 1 cup of vegetable oil

INSTRUCTIONS

  1. Drain and press a block of tofu to get as much liquid out as possible.
  2. Coat the tofu evenly with tempura flour. Then roll it in bread crumbs and deep fry until golden brown. Set it aside.
  3. Combine daikon, carrot, red bell pepper and green bell pepper in a salad bowl.
  4. To make salad dressing, in a sauce bowl, add 2 tbsp. of water into pad Thai sauce. Then microwave for a minute.
  5. Add the dressing to a salad bowl and toss lightly.
  6. To assemble this dish, lay fried tofu on one side of a plate (optional: top with small amount of pad Thai dressing for a taste). Next add salad on the other side, garnish as desired and serve.
