INGREDIENTS
- 350 g. of yakisoba noodles
- 6 oz. of Thai 3 Wheels pad Thai sauce
- 5 tbsp. of vegetable oil
- 4 oz. of firm tofu (cut into small dice)
- 2 eggs
- 2 oz. of bean sprouts
- 1 oz. of green onion (cut into long-thin sliced)
- 1 oz. of chopped red onion
- 1 oz. of dried shrimp
- Lime wedges
- Ground peanuts (optional)
INSTRUCTIONS
- Cook yakisoba noodles in a pot of boiling water for 2-3 minutes and stir occasionally until tender. Next rinse under cold water, drain and set aside.
- Heat vegetable oil in a frying pan over medium heat for a few minutes. Then add chopped red onion and stir-fry for a minute until smell aroma.
- Add dice firm tofu and dried shrimp to the pan and stir-fry to mix the ingredients together. Then push them to one side of the pan.
- Add two eggs on the other side and whisk them until incorporated. After that stir-fry to mix all the ingredients in the pan.
- Add yakisoba noodles, bean sprouts, green onion and pad Thai sauce to the pan. Then stir-fry once again to mix all the ingredients together. And make sure to toss gently for a minute or two. So the sauce is absorbed by other ingredients.
- Turn off the heat. Transfer the dish to a plate. Then squeeze lime juice and sprinkle ground peanut on top. Or leave the peanut on the side. Lastly garnish the dish with green onion, bean sprouts and lime wedges.
