Thai Green Curry Fried Rice with Baked Pork Back Rib

Recipe for 1 serving 

  • 4 oz. of Thai 3 Wheels green curry sauce 
  • 250 g. of steamed rice (1 cup)
  • 1 piece (2oz.) of baked pork back rib 
  • 2 tbsp. of vegetable oil
  • 2 oz. of green bean (cut into small dice)
  • 1 oz. of red bell pepper (cut into small dice)
  • 2 red chilies (finely chopped) 
  • 2 red chilies for garnishing
  • 2 Lime wedges 
  • Sliced cucumbers 
  • Fresh Thai basil leaves for garnishing

INSTRUCTIONS

  1. Put a pork back rib on a baking pan, cover it loosely with aluminum foil. Then bake in the oven at 350 F for about 30 mins until evenly cooked through. 
  2. Heat vegetable oil in a fried pan over medium heat.
  3. Add green bean and red bell pepper to the pan and fry them for 2 mins.
  4. Add steamed rice and stir to combine with step 2 ingredients for 2 mins. 
  5. Add green curry sauce and stir to combine with step 3 ingredients over high heat for 1-2 mins.
  6. Assemble green curry fried rice and pork back rip on a plate. Sprinkle finely chopped red chilies on top and garnish with red chilies and Fresh Thai basil leaves.
  7. Lastly serve with cucumber slices and lime wedges.
