INGREDIENTS
- 6 oz. of Thai 3 Wheels Pad Thai sauce
- 1 lb. of shrimp (size 13-15)
- 4 tbsp. of vegetable oil
- 3 tbsp. of chopped fresh cilantro
- 3 tbsp. of chopped fresh shallot
- 3 tbsp. of chopped fresh lemongrass
- 3 tbsp. of fresh squeezed lime juice
- 2 tbsp. of sweet chili paste
- 2 tbsp. of finely chopped Thai fresh chilies
- 2 tbsp. of chopped fresh mint leaves
- Some fresh lettuce and mint leaves for garnish
INSTRUCTIONS
- Peel and devein the shrimp by gently squeeze its tail to remove it off the body. Then cut down the back of the shrimp and remove the vein. Next pat the shrimp dry with paper towels.
- Heat vegetable oil in a frying pan over medium-high heat. Then add shrimp to the pan and cook until cooked through and set it aside.
- To make the dressing, first, combine pad Thai sauce with lime juice, Thai fresh chilies and sweet chili paste in a bowl. Then give all the ingredients a good stir. Second, add fried shrimp, cilantro, shallot, lemongrass and mint leaves in the dressing and mix them well.
- Place lettuce on a serving plate, spoon shrimp and all herbs on top, drizzle the dressing and add some mint leaves for decoration. For the rest of the dressing, put it in a small cup and serve alongside the dish.
