Red Curry Ramen with Shrimp

INGREDIENTS

  • 1 jar of Thai 3 Wheels red curry sauce
  • 10 oz. of fresh ramen noodles
  • 8 oz. of white shrimp (size 13-15)
  • 4 soft boiled eggs (peeled and halved)
  • ½ cup of fresh cilantro leaves
  • ½ cup of red and green bell pepper (cut into thin strips)
  • 1 jalapeño (thinly sliced)
  • 1 tsp. of toasted black sesame seeds
  • Lime wedges

INSTRUCTIONS

  1. Cook ramen noodles in a pot of boiling water for 2 mins and stir occasionally until tender. Next rinse under cold water, drain and set aside.
  2. Add red curry sauce into a sauce pan and warm it over medium heat until boiling.
  3. Add shrimp, red & green bell pepper and other vegetables of your choice into the sauce. Next reduce the heat to medium-low and simmer for 5 mins and be sure shrimp is fully cooked. Then turn off the heat.    
  4. Transfer the noodles to a bowl and add the sauce over it. Then top with shrimp, soft boiled eggs, cilantro, jalapeño, toasted black sesame seeds and lime wedges. Enjoy!
