RECIPE for 1 serving
- 4 oz. of Pad Thai dried rice noodle
- ½ jar of Thai 3 Wheels Pad Thai sauce
- 3-5 tbsp. of vegetable oil
- 4 oz. of lobster tail
- 1 oz. of Dried shrimp
- 2 eggs
- 3 oz. of beansprouts
- 3 oz. of fried tofu cut into small dice
- Green onion (sliced)
- Lime wedges
- 1 oz. of ground peanuts (optional)
- Pitch of red chili flake (optional)
INSTRUCTIONS
- Place Pad Thai dried rice noodle in the large bowl. Then pour over plenty of water to cover the noodle. Let it soak for 30 mins. Then drain and rinse under cold water for 15 sec. and set it aside.
- Heat 2 tbsp. of oil in a fried pan over high heat. Then add lobster tail and cook until mostly cooked through. And set it aside.
- Heat 3 tbsp. of oil in a fried pan over medium heat. Then add dried shrimp and cook for a minute. After that push to one side of the pan. Next add 2 eggs on the other side. Then scramble using a wood spoon and mix into dried shrimp.
- Add beansprout, tofu, noodles and Pad Thai sauce to the pan. Then mix the ingredients together and toss gently for a few mins until the sauce is absorbed by the noodles.
- Once completed, plate it. Then squeeze lime juice on top and sprinkle ground peanuts or put it on the side along with red chili flake. Garnish with green onion.
