Nam-Neaung with Thai Peanut Sauce

INGREDIENTS

  • 2 oz. of dried vermicelli noodles
  • 8 oz. of fully cooked turkey meatballs
  • 6 oz. of Thai 3 Wheels peanut sauce
  • 4 oz. of fresh cucumber (cut into small cubes)
  • 4 oz. of fresh pineapple chunks (cut into small pieces)  
  • 2 oz. of fresh peeled garlic (cut into small cubes)
  • 1 oz. of fresh red chilies (cut into small pieces)
  • 1 lime (cut into small cubes)
  • 20 fresh lettuce leaves

INSTRUCTIONS

  1. Bring 3 cups of water to a boil. Next add dried vermicelli noodles and soak for 5-7 mins or until soft. Then drain the water and set it aside.
  2. Wash cucumber, pineapple, red chilies and lime. Then dry them with paper towel and cut them into small cubes/pieces.
  3. Wash lettuce leaves and set them aside.
  4. Add peanut sauce in a bowl and microwave for 45 seconds. For thinner sauce: add 1 Tbsp. of water per 2 Tbsp. of peanut sauce, mix well and microwave.
  5. Arrange turkey meatballs on a baking pan and bake in the oven at 320 F for 7-10 mins or until evenly heated through.
  6. On a serving plate, arrange all the ingredients in a circle and lay a warm peanut sauce bowl in the middle.
  7. To enjoy this dish, put one lettuce leave on your palm. Next add small amount of each ingredients on top. Then top them with delicious peanut sauce and fold the lettuce and enjoy!
