Ingredients for Fried Rice
- 4 oz. of Thai 3 Wheels massaman curry sauce
- 4 oz. of russet potato (cut into small cubes)
- 4 oz. of white onion (cut into small cubes)
- 1 oz. of basil leave
- 1 oz. red chili ( cut into small cubes)
- 2 tbsp. of vegetable oil
- 1 cup of steamed white or brown rice
Ingredients for Crab Scrambled Eggs
- 4 oz. of crab meat
- 3 eggs
- 2 tbsp. of vegetable oil
- 2 tbsp. of milk
- ½ tsp. of soy sauce
Instructions for Fried Rice
- Wash, peel and cut potato, onion and red chili into small cubes.
- Add water to a pot and bring it to a boil. Next add potatoes into the pot and cook until they’re slightly cooked. Then drain the water and set them aside.
- Heat vegetable oil in a frying pan over medium heat.
- Add white onions and potatoes to the pan and fry them for 2 mins.
- Add steamed rice and stir to combine with both ingredients for 2 mins.
- Add massaman curry sauce and stir to combine with step 5 ingredients over high heat for 2 mins
- Add red chilies and basil leaves and gently stir for another few mins to mix with the rice. Then turn off the heat.
Instructions for Crab Scrambled Eggs
- Crack 3 eggs into a bowl, add soy sauce and milk. Then whisk them until incorporated. Next add crab meat and whisk them together.
- Heat vegetable oil in a frying pan over medium heat. Then pour the whisked eggs into the pan and immediately start pushing them across the bottom with a rubber spatula.
- Cook them slowly over low heat. As the eggs cook, use a rubber spatula to gently scrape across the bottom and sides of the pan and folding the eggs as you go.
Assembling
- Spoon fried rice in a cup and transfer it to a plate.
- Add crab scrambled eggs on top.
- Garnish with vegetables of your choice and serve.
