Massaman Curry Squid

RECIPE for 2 servings  

  • 1 Jar of Thai 3 Wheels Massaman curry sauce
  • 14 oz. of squid hood 
  • 1 oz. of baked peanuts 
  • 1 medium sized potato, cut into 1 inch cubes 
  • 1 cup of steamed Jasmin rice 

INSTRUCTIONS

  1. Cut the squid 2 inch square and score a crisscross pattern lightly into the fresh with a small knife. 
  2. Bring water to a boil then add the potato cubes into a pot. And boil it for about 20 mins until it’s slightly under-cooked. Then drain the water and set the potato cubes aside.
  3. Add Massaman curry in a sauce pan and warm it over medium heat until boiling. 
  4. Add squid and potato cubes. Then reduce the heat to medium-low and simmer for 5 mins or until squid is cooked. 
  5. Sprinkle with baked peanuts on top and serve with steamed Jasmin rice.
