Massaman Curry Shrimp with Naan

INGREDIENTS

  • 1 jar of Thai 3 Wheels massaman curry sauce
  • 1 lb. of white shrimp (13-15 CT)
  • 8 oz. of potato
  • 4 oz. of sweet onion 
  • 2 oz. of baked peanuts
  • 4 pieces of naan

INSTRUCTIONS

  1. Potato: Wash, peel and cut into 1 inch cubes. 
  2. Sweet onion: Wash, peel and cut into 1 inch chunks. 
  3. Bring water to a boil. Add the potato cubes into a pot. Boil them for about 15 mins until it’s slightly undercooked. Then drain the water and set them aside. 
  4. Add massaman curry into a sauce pan and warm it over medium heat until boiling.
  5. Add shrimp, potato cubes and sweet onion into massaman curry sauce. Then reduce the heat to medium low and simmer for 8 mins or until shrimp is cooked. Turn off the heat and add baked peanuts. 
  6. Preheat oven to 400 F. Then remove naan from bag, arrange 4 pieces on the baking pan. Bake them for 3 mins or until evenly heated through. 
  7. Cut baked naan into medium size triangle shape. Then lay them on a plate and serve with a bowl of massaman curry shrimp.
