Green Garden Salmon in Green Curry Sauce

INGREDIENTS

  • ½ jar of Thai 3 Wheels green curry sauce
  • 4 oz. of salmon fillet
  • 4 oz. of green bean
  • 4 oz. of baby bok choy
  • 2 oz. of sliced green bell pepper
  • 1 large sliced avocado
  • ¼ cup of sweet basil
  • 2 tbsp. of vegetable oil

INSTRUCTIONS

  1. Green bean: Cut the stem end off on both side. Then thoroughly washed and drained.
  2. Baby bok choy: Trim off the root end and cut halved length wise. Then thoroughly washed and drained.
  3. Bring water to a boil. Then add green bean and baby bok choy and cook for about 3 mins or until soft. After that rinse and drain and set them aside.
  4. Dry salmon with the paper towel. Then heat 2 tbsp. of vegetable oil in a fried pan over medium heat. 
  5. Add salmon on a pan and cook until fully cooked and set it aside.
  6. Add green curry sauce on a sauce pan and warm it over medium heat until boiling. Then reduce the heat to low, add salmon and simmer for about 5 mins. 
  7. To assemble this dish, lay green bean and baby bok choy on a plate. Then put salmon on top, add sliced avocado and sliced green bell pepper around salmon. Spoon green curry sauce on top of salmon. Lastly, add sweet basil on top of salmon.
