Baked Greenshell Mussels with Thai Green Curry Sauce

RECIPE  

  • 1 lb. of greenshell mussels
  • 4 oz. of Thai 3 Wheels green curry sauce
  • ¼ cup of sweet basil
  • ¼ cup of red bell pepper
  • 2 lime leaves
  • Steamed jasmine rice

INSTRUCTIONS

  1. Wash the mussels in a bowl with cold water then drain.
  2. Soak the mussels in the hot water for 5 mins then drain.
  3. Add green curry sauce to a sauce pan. Warm it over medium heat until boil. 
  4. Arrange the mussels on the baking pan. Then fill each of them with green curry sauce. Next add basil, bell pepper and lime leaves over the top of mussels. 
  5. Bake in the oven at 320 F for 7-10 mins or until evenly heated through. 
  6. Plate them and add extra green curry sauce on top right before serving. 
  7. Serve with steamed jasmine rice.
